02/5​Where was falooda born?

Falooda is a popular item on the menus of almost all Indian restaurants and street vendors who sell milkshakes and ice creams. Originally, falooda was a part of Persian cuisine where it was known as faloodeh. But soon it travelled to several South Asian countries including India, Pakistan and Bangladesh with Persian merchants and rulers who invaded the region.

Introduced by Mughals in India, falooda was initially a rich jelly-like drink made with strainings of boiled wheat which was mixed with fruit juices and creams in a bowl. Jahangir, the son of Akbar was fond of falooda and so the dish was served only in the royal families at that time. Later, falooda caged out to travel throughout the world and transformed into a cool dessert-drink today.

Falooda is both a dessert as well as a drink. This is because you can not just sip it away. You have to spoon the edible ingredients as well such as falooda sev, jelly and nuts.

Varieties of falooda versions are available today with different flavours of sugar syrups and faloodas that are served as milkshakes. During earlier times people used to prepare the wheat or corn starch as thin batter and passed it through a sieve to make falooda or sev. Nowadays, raw falooda is easily available in the supermarket. You just have to boil it at home to make the luscious dessert drink.

Most of the flavours of falooda are found in Mumbai. Rose syrup dipped into a glass of cold milk with falooda sev, nuts, cream and sabja seeds topped with vanilla ice cream; you surely can’t think of a better way to resist the sun while shopping at the famous Crawford Market. This iconic eatery is Badshah’s Cold Drinks which sells eleven varieties of faloodas. No one else in the city gets the right proportion of ingredients as they do. They have a perfect mix of sugar and cream, which easily fills up your stomach.

Roshan di kulfi in Karol Bagh, Delhi is equally mouth-watering and satisfying. They have got four varieties of faloodas but the Paan Falooda Kulfi and the Chocolate Oreo Kulfi is loved by all Delhites. They also offer sugar-free falooda kulfi and one of their special highlights is mango falooda kulfi, which makes its appearance only in summers. However, apart from these two eateries, there are many other iconic places as well to devour luscious falooda.

05/5​How to make falooda at home

Making a delicious falooda at home is not so difficult. Most of the ingredients are readily available in the supermarket and all you need to do is some hard work in the kitchen. Buy falooda sev, some sabja seeds, dry fruits, rose syrup, milk and ice cream. Sabja seeds are to be pre-soaked in a bowl of water a day before.

All you have to do is sweeten some hot milk and let it cool down later in the fridge. Once chilled, pour the milk, swollen sabja seeds, boiled falooda sev and rose syrup in a tall glass. Top it with a scoop of vanilla ice cream and garnish with almonds and pistachios. Some people might add flavoured jelly to their glass of falooda, but that totally depends on your taste and preference.
